Cook rice according to package directions. Let cool slightly.
In a medium bowl, gently toss cubed tuna with coconut aminos, rice vinegar, ginger, green onions, salt, and red pepper flakes. Let marinate 5-10 minutes.
Divide rice between two bowls. Arrange marinated tuna, avocado slices, cucumber, and hemp hearts on top.
Drizzle any remaining marinade over the bowls. Squeeze lemon juice on top.
Garnish with crumbled nori and extra green onions. Serve immediately — poke is best fresh.
