Preheat the oven to 350°F/177°C.
In a bowl, whisk together all the wet ingredients.
In another bowl, mix the dry ingredients together.
Gradually add the dry ingredients into the wet and mix thoroughly until smooth. Then add in the chocolate chips.
Using a spoon, drop 10 cookies onto parchment/splat mat (the cookies will spread a little).
Bake for 6-8 minutes. Depending on your protein, the cooking time may vary. It's best to undercook so they are fudgy.
Let it cool slightly and put on a cooling rack to prevent cookies from continuing to bake or dry out.
