Preheat the oven to 325°F (163°C).
Combine all wet ingredients into a bowl and whisk and set aside.
In a separate large bowl, combine all dry ingredients and stir, then add wet ingredients and stir until smooth consistency.
Spray a loaf pan with cooking spray. Pour the batter into the loaf pan and bake for 25-30 minutes or until a toothpick comes out clean.
Let cool completely before serving — GF baked goods firm up and improve in texture as they cool. For best results, rest 15-20 minutes.
